 The nut (aka saddle) is that little thingy up by the headstock that holds the strings apart from each other. Traditionally they've been made from bone or occasionally hardwood. Today synthetic and various graphite-based materials are becoming more and more common. Occasionally somebody will come up with the brand new invention of metal (usually brass) nuts.

The material for the nut does affect the sound a little, but not very much. It's more important that it's correctly cut.
